I saw a version of these cupcakes in Family Fun magazine and thought they were so cute for the first day of school! They were super simple to make and the kids really enjoyed them. I colored the icing yellow, reserving a small amount of white for the blackboard writing and applied the yellow base to the cupcake. I put the white icing in a sandwich bag and cut the corner off so I had a small tip to write on the graham cracker. Make sure your icing is relatively soft and don’t squeeze too hard or the bag will break. (I used regular graham crackers instead of the fudgy ones for the blackboard.) You can write your child’s name, letters, numbers, equations, grade, or whatever you like on the cracker. I placed the written on cracker on the cupcake at a slight angle and used a toothpick behind it to guarantee it stood up.
